Etymology

Cognate with Kagoshima とふ tofu; Kunigami (Iejima, Nago) とーぷ toopu; Okinawan とーふ toofu; Yonaguni とぅぶ tubu; and standard Japanese とうふ【豆腐】 toufu "tofu".

Notes

Okinawan tofu, also called Shima tofu, is notable in that the soy pulp (okara) is separated out prior to the boiling process, instead of after. The resulting tofu is generally dense and is a popular ingredient in Okinawan stir fried dishes.
